Simply chop an onion, one red and one sweet pepper. Peel and dice butternut squash and pop all into saucepan with vegetable stock cube and water to cover.
When all vegetables are cooked blitz with hand held blender and serve with crusty bread. I have added lentils and chilli flakes which make a really thick warming soup.
